Odysea: Wild thyme and fragrant herb (Greek honey)
This intensely aromatic Greek honey is produced for us by Alexandros Gousiaris. He lovingly tends his bees and their hives throughout the year, ensuring they are protected in the winter and moved during the spring and summer periods to areas in Greece where the thyme and fragrant herbs are flowering in abundance.
Odysea honey is extracted cold and is unfiltered to ensure that the nutritional properties of the nectar and pollen are not destroyed. Crystallisation is a sign of pure, unprocessed honey: it is triggered by the naturally occurring pollen and trace elements. If you prefer your honey clear, simply place the jar in a bowl of warm water and the crystals will melt.
Chef's tip: Ideal in marinades and for roasting, as a desert with Greek yoghurt or spead on a thick slice of fresh bread. [Vegetarian Society Approved]
Honey should not be given to infants under 12 months of age.
