This honey is produced from bees in the Garrigue around the town of Rades in the Pyrenees. The landscape is arid with rocky hills and only tough aromatic herbs and heathers survive. The honey is extracted in April mainly from white heather. It has a rich caramel flavour and a creamy texture.

There are about 50,000 workers, 500 drones and one queen in a hive. The queen is the mother of all these bees and can lay up to 2000 eggs on a good day. The female workers develop from the same kind of eggs as the queen but the queen lava is fed more royal jelly and grows up in a bigger cell. Drones (males) contribute no work to the colony, their only function is to go out and mate with young queens from other hives. In the autumn their sisters evict them and they die, being unable to feed themselves.
