Olives are hand-picked from 15th October to 31st December, when they are at peak ripeness and are then stone pressed and cold kneaded. The resulting oil is a clear golden yellow with an olive-green reflection. It has a delicate aroma and a complex taste: fruity with hints of cider apple, new mown grass, rocket with sweet notes of almond and fudge. It’s ideal to use on raw salads, bruschette, roast grilled fish and vegetables and is especially good for frying food.
